When I get the old "so, a Ve-gun huh? What do you, you know...EAT?!?!" routine, my usual answer is "the same as what you eat, but with no dead stuff". I think breakfast illustrates this really well. My absolute number one favourite thing to have is pancakes, covered in Vitalite and agave nectar, or peanut butter. But often I can't be bothered to make pancakes, or really cook at all, in the morning. So I have toast, or bagels (with peanut butter and blueberry jam) or cereal. I love cooked breakfasts too: fried bread, onions, baked beans, hash browns, potato waffles, grilled tomatoes, barbecue sauce. Vegan cooked breakfasts like this are easy to find if you're having breakfast out. I really love it when people come round to the idea that being vegan isn't impossible, or even difficult. I even find it fun.
